Put half the butter in to melt. Season steaks with dry rub.
Reduce heat to medium high.
New york steak recipe cast iron. Preheat the oven to 400 degrees f (204 degrees c). With tongs, lay the steak in the hot pan and cook for about 2 minutes on the first side, adjusting the heat if it gets smoky. Get the pan nice and hot, you can add the oil.

Once the oven is just a few minutes away from being preheated, add the butter and heat until melted. Wait for the oil to heat, it needs to just commence to smoke before adding the steak. In a cast iron skillet put the heat on high and let it get hot.
Make the steak dry rub by combining the chili powder, ground coffee, brown sugar, paprika, cumin, oregano, onion powder, salt, and black pepper in a mortar pestle. Let rest for at least 20 minutes prior to roasting. Tent a square of aluminum foil over the plate of steaks, and allow your new york strip steaks to rest for a minimum of 5 minutes.
Use a whopping pan in order to smoke steak. Place steaks on the baking sheet or wire rack and generously season both sides with salt, pepper, and garlic powder. Season both sides with salt and pepper.
Add the steaks in a single layer. The thicker the cut of steak, the greater salt and pepper you should have. Place the steaks in the oven.
Cast iron pans perform most optimally for this particular meal. Put the steak in, cover. Coat both sides of the steak with salt and pepper.
